UW Professional & Continuing Education
Nicole Flateboe is a registered dietitian with a primary interest in preventing disease and promoting health through good food at both the individual and population levels. She specializes in maternal and child nutrition and is intrigued by the multiple factors that impact obesity risk. Flateboe works as a nutrition consultant for the Special Supplemental Nutrition Program for Women, Infants, and Children, more commonly known as WIC. There she provides evidence-based training and development to frontline staff working with low-income families. She also serves on the board of Nutrition First, a nonprofit organization dedicated to improving the health of children in Washington state. She holds a bachelor’s degree in nutrition from Bastyr University and completed her dietetic internship at the University of Washington, where she also earned a master’s in public health.
